Stuffed Burgers – Where have you been all my life!

I have a new love in my life, I’ve looked near and far to find the perfect burger recipe and always been disappointed. I mean they say homemade is best right, and so most of the time I fancied a burger I’d hunt out another recipe and ultimately end up disappointed. From the “so dry you need a drink to wash it down”, to the “how is it so tasteless when so many flavours went in”, they’ve always been edible but always disappointing.

Well all that has changed and I now have a burger recipe that I’d be proud to serve to guests thanks to Matthew over at Plating Pixels and his Best Bacon and Cheddar Stuffed Burger.

Actually let me be clear, the fact this burger is stuffed adds an extra thumbs up but it’s the burger patty itself I was so delighted with. Or maybe because it’s stuffed it cooks differently who knows but I think the unstuffed burger would be pretty delicious too.

Though come to think of it why I’ll ever want to make a plain burger after trying a stuffed one is beyond me. It just makes so much sense, all the toppings go inside the burger and don’t fall out when you eat or overwhelm the burger. I think in a lot of cases and sadly in some restaurants the mounds of bacon and cheese have the job of covering up a bland burger, but with this recipe no hiding is needed.

My photos really don’t do it justice, as I was in a rush to get dinner made and then it smelled so good it didn’t last long enough to get snapped.

I didn’t follow Matthew’s recipe to the letter as I had slightly different ingredients in but similar enough. I made double the quantity to get 4 burgers.  I used red onion instead of regular but I made sure that it was well minced, and I used red jalapeños instead of regular – they still have the punch but are a bit sweeter. The cheddar I used was extra mature and shock horror we only had 2 slices of bacon. At first I thought that the mixture was going to be too sloppy but after resting it was spot on.

I didn’t have any avocados but did have some guacamole which worked a treat.

TL/DR:

I’ve never been happy with any burger recipe until I tried this one. It’s the bees knees.

My photos don’t do it justice. You will drool when you see Matthew’s and then more when you can smell the burgers frying.
