I flicked over the TV onto the food channel in the middle of an episode of Jamie’s 30 minute meals while he was talking about using creme fraiche to make a super quick custard tart.
Recipe from Jamie Oliver’s 30 minute meals.
Basically it’s just sugar, eggs, creme fraiche and of course you use ready made puff pastry. He adds vanilla and orange zest but the tarts would still be nice without meaning you’d only need 4 ingredients!
To save on time he part bakes the pastry in the tins but doesn’t weigh it down so it puffs up like volauvents and then he presses it down with a spoon before filling. This tastes fine but if you care more about presentation that saving time I think it’s worth baking them blind.
I was pleasantly surprised by how nice the custard tasted and will be making them again when I want tarts in a hurry.
